Over the years, Sergio Calderon has built up a wine cellar of over one thousand five hundred references, from nearly two hundred different wine makers, to compliment the cuisine of Sébastien Bras. So many stories to be found within the extensive wine list which bears witness to his knowledge, his personal tastes and his passion.
"One of our specialities is to offer a large selection of white wines which compliment the highly vegetal cuisine of Sébastien Bras" explains the sommelier. "Pure wines, a word that I particularly appreciate when describing wine." He proposes wines from all the major wine producing regions in France and many from elsewhere. "We also promote the winemakers of the region; Philippe Teulier in Marcillac, the Plageoles family in Gaillac, Marc Penavayre from Château Plaisance in Fronton. And obviously, my wine list would not be complete without a selection of wines from Argentina, my country of origin, where, with the help of a friend, I produce a Malbec."
"But, above all, I focus on wines produces by winemakers who are passionate and respect nature." Bonds of friendship and mutual respect have been created, enabling Sergio to stock his wine cellar with great vintages and little known gems. "My cellar is full of nectars that most wine amateurs dream of tasting. To cite but a few names, Henri Jayer, Didier Dagueneau, Emmanuel Reynaud, one of the most prestigious Châteauneuf-du-Pape, Elian Da Ros, Laurent Vaillé... These producers have entrusted us with their bottles; it is a huge responsibility for us. If certain bottles are priced at several thousand Euros, others will bring pleasure to the table, and to me likewise, for just tens of Euros. It is our job to understand what the customer is looking for, what wines will compliment Sébastien's cuisine and to propose a voyage of discovery. My soul aim, that our customers leave with the feeling that they have just experienced something very special."
