Hand in hand with the producers

"We owe our livelihood to this land, it is important to give preference to its produce. Existing on Aubrac or nearby is not easy for the producers" argues Sébastien Bras. "It is vital to support them, given the passion and effort that they put into their work. We sometimes help them to expand, we encourage them to broaden their experience and to up their game. Clearly, quality is essential and they make huge efforts to meet our standards."

"Effectively, our links with these farmers, growers and artisans are very close. We are very fond of the prime Aubrac beef from la maison ConquetGreffeuille has carved out a deserved reputation for rearing excellent suckling lamb, for example. We have always worked closely with the coopérative fromagère jeune montagne de Laguiole, as in the production of our distinctive butter, made from buttermilk, which I have now perfected, thanks to their savoir-faire. But we also enjoy the highly unusual organic cheeses from Laguiole, made by Lionel Sabriet, a small producer. 

These lasting relationships are sometimes passed down from father to son, as is the case with the Roaldès family. "Delightful market gardeners, ever-present at Rodez market, they started supplying my father over 30 years ago. Now, their offspring work with me. They carry out numerous trials for us with different vegetables, providing inspiration for my cooking, such as the 100% Aveyron peppers which should come on stream next year."
