“The happiness we bring stems from a deep respect for people, for these men and women, whether they are suppliers, permanent employees, or seasonal workers,” Sébastien and Véronique Bras like to say. They are the links in a chain without which this extraordinary experience could not exist. In the kitchen, there are no shouts of “Yes, Chef!” in a military-like atmosphere, but rather a flurry of first names. Nor is there any need to raise your voice to command respect. Transparency is key, even in the kitchen, which is open to visitors, who are often surprised by the focused and calm atmosphere. As part of an effort to improve the quality of work life, employees at Le Suquet can now enjoy their Sundays with family or friends. The secret also lies in the bond created between everyone through the Bras KC association.
The chain of transmissions
Within the Bras family, passing on knowledge is a core value that has allowed them to forge this bond across three generations. Naturally, it serves as an example. Sébastien and Véronique are aware of the profound shift in aspirations among the younger generation they welcome and have undertaken in-depth, collaborative work with professionals to identify and better address these aspirations. This transmission has been a tangible reality for several years now for Régis, who was Michel's and then Sébastien's second-in-command from the very beginning and has been a pillar of the kitchen for over 30 years. With kindness and all his experience, he welcomed Julien to the kitchen, who took over from him. Sergio, too, is preparing to hand over the reins of his wine cellar to Théo. The other managers—Charles, the restaurant director; Maxime and Antoine, the head waiters; Benjamin, the pastry chef; and Violaine, the front-of-house manager—also train their teams and pass on the Bras spirit.
KC Arms to bring people together
Behind this play on words lies an association of truly dedicated young people! Led by its president, pastry chef Benjamin Seignat, it brings together all the members of the Suquet team who want to get some fresh air, breathe new life, get active, explore the region, and above all, bond, on the days the restaurant is closed. No more managers, chefs, or employees; the pressure melts away, along with the hierarchical barriers. Mountain biking with Sébastien, grape harvesting at the Plageoles vineyard, summer concerts in the town square, the Aubrac trail race, dinners prepared by chefs from other countries... the Bras KC have no shortage of ideas for getting together. All these great moments often inspire some "veterans" to make a detour on their holiday route to stop by Suquet and relive some memories.
