A pair of sommeliers

Sergio Calderon, this Argentinian who became a resident of Aveyron, encountered the Bras family and wine even before the Suquet opened. This pillar of the House is now assisted by Théo Larroque. Two generations make an ideal partnership, currently traversing the vineyards, meeting the men and women of the vines, exploring the hillsides, tasting, marveling, and selecting the finest wines. One has cultivated invaluable relationships over time with the best winemakers and continues to set aside the rare gems reserved for him by loyal suppliers, such as Henri Jayer, Didier Dagueneau, Emmanuel Reynaud, Elian Da Ros, and Laurent Vaillé, whose very names evoke dreams. The other is now scrutinizing the emerging generation of young talent to awaken every desire.

Nuggets and newcomers

The wine list features wines from all the wine regions of France and beyond. Of course, regional producers—Philippe Teulier in Marcillac, the Plageoles family in Gaillac, Marc Penavayre from Château Plaisance in Fronton, Elian Da Ros and Sandrine Farrugia in Côtes du Marmandais—are well represented. Perhaps one of the unique aspects of the Suquet wine cellar? A very wide selection of white wines that pair wonderfully with certain vegetal notes in Sébastien Bras's cuisine. But there's no question of applying formulas or preconceived choices: the sommeliers listen to the client's preferences before revealing their gems to both seasoned wine lovers and novices seeking a taste of something special.
