A sommelier tandem
Sergio Calderon, this Argentinian who became Aveyron, met the Bras et le Vin family even before the Suquet opened. This pillar of the house is today seconded by Théo Larroque. Two generations for an ideal tandem that today travels the vineyards, meets the women and men of the vines, walks the hillsides, tastes, marveling and selects the vintages. One has woven precious relationships with the best winegrowers and winegrowers over time, and continues to put aside the rare pearls that reserve for faithful suppliers whose evocation is today dreaming like Henri Jayer, Didier Dagueneau, Emmanuel Reynaud, Elian Da Ros, Laurent Vaillé. The other today scrutinizes the young generations of emerging talents to wake up all desires.
Nuggets and neophytes
The map offers wines from all wine regions of France and elsewhere. Of course, regional producers: Philippe Teulier on Marcillac, the beach family in Gaillac, Marc Penavayre of the castle Plaisance à Pédéon, Elian Da Ros and Sandrine Farrugia, in Côtes du Marmandais ... are well represented. One of the peculiarities of the Suquet cellar perhaps? A very large choice of white wines that go perfectly with certain vegetable notes from Sébastien Arm's cuisine. But there is no question of applying preconceived recipes or choices: sommeliers listen to the desires before revealing their nuggets to enlightened amateurs, as well as neophytes looking for drops of emotions.
The cellar of your desires
On the mineral path bordered by a stream which leads to the restaurant room, appears, behind a transparent door which arouses curiosity, a subdued atmosphere crossed by a few lines of lights which light up beautiful bottles. In this stone and wood cellar are carefully stored some of the twenty-five thousand bottles patiently united. Do not insistently come across the gaze of Sergio or Théo, they could suggest you enter this treasure cellar.
