The chef from Aubrac reveals himself in his first book

"To live happily, live hidden." This could have been the motto of Sébastien Bras, who always preferred to roam the paths of the Aubrac plateau rather than those of fame. At over 50 years old and after more than 25 years of experience, he agreed to reveal himself in his first book, * Le Goût de l'Aubrac ), and to map out his inspirations within its pages.

A work divided into 4 parts, white, green, yellow, red, like so many facets of this kaleidoscope which reveals in dotted lines the cook and the life of Le Suquet, the restaurant in Laguiole where Sébastien has always worked.

Memories and inspirations

Family, of course, holds a special place for Sébastien, a third - generation chef following in the footsteps of Grandma Bras and Michel Bras, and who has always been accompanied by his wife, Véronique. The book reveals memories, like the mustache stained by the still-warm milk from milking, and the gestures that punctuate the restaurant's daily life: harvesting in the garden, the bouquets delicately arranged by Gi, or the grape harvest, an annual ritual that brings together the Bras KC, the staff association. Key producers, figures of the establishment, travels, tools, plants… these are just some of the chapters that unfold the essence of a life. Nature and the surrounding landscapes hold a special place. Sébastien recounts his mountain streams, his red ski runs, and the bumpy roads that lead him each time to a little more serenity and the desire to share more of his passion for the Aubrac region (published by Phaidon).
