La Halle aux Grains - Trade Stock Exchange - Pinault Collection
Paris - Halleauxgrains.bras.frMichel and Sébastien Bras invite you to discover this extraordinary place, with a breathtaking view of Paris, on the third floor of the Trade of Commerce. They reveal an unprecedented repertoire of their cuisine where the grain brings its tone.
From the Halle aux Blés ... to the grain hall
Michel and Sébastien Bras found their inspiration for this new place in the extraordinary history of the building raised in 1763, originally "Halle aux Blés". It was dedicated, formerly, to the trade in wheat and other cereals or legumes, as Arthur Young reports in his story in 1789: "In the arena, peas, beans, lentils we sell there. In the surrounding divisions, there is flour on the benches. We go through double stairs, turning on each other, in spacious apartments, to put rye, barley, oats ”.

A new writing around the grain
The cooks wanted to breathe into the grain hall a kitchen in which grains, seeds, seeds of all countries and all families, legumes, cereals, oilseeds, umbelliferous, would bring their tone. They appropriated their grain to better understand it. They tasted it, germinated, grilled, blown, infused, fermented and cooked in a thousand ways in order to compose this new writing. Beyond that, it caused very beautiful meetings, with cereal trees, craftsmen, transformers.
Lunch, taste and dinner
La Halle aux Grains offers a reception punctuated by three times, lunch, afternoon and dinner. Three moments during which tasting suggestions evolve over the light which pierces the space. Open every day of the week (except for lunch and taste on Tuesday), the reservation is recommended.

Spirit of the place
Michel and Sébastien Bras imagined a place that has "a soul", filled with attentions at all times. This space suspended in the sky, with a breathtaking view inside on the work of Tadao Ando and the painted decor of 1889 as well as on the roofs of Paris, displays a strong personality, asserted as much by design (design of space, graphic design, table arts, styling) as by the choice of quality craftsmen (ceramists, weavers, Joaillers).
The "grain cuvées"
It is absolutely necessary to also discover the "grain cuvées", a card of unpublished and exclusive bottles, written thanks to the complicity of the friendly winegrowers and winegrowers, which highlight the grape varieties of their terroir.
