Régis, 40 years at the heart of Maison Bras

“I only remember the good times; I’ve forgotten the rest,” declares the man who, barely old enough to work, accompanied Mémé Bras and her son Michel, who took him under his wing and from whom he learned everything. “I have to admit, I was very young and didn’t yet have the skill, but Michel’s perfectionism shaped me.” Later, he assisted Sébastien Bras, whom he watched grow and flourish in the kitchen. “We weren’t in a hierarchical relationship, but a friendship,” explains Régis , who shared a close bond with the chef. “I even cooked with Alban, Sébastien and Véronique’s son, who came to do an apprenticeship in the bakery—that’s four generations!” he smiles.

Memories and sharing

“Obviously, over 40 years, so many wonderful memories have accumulated. I’ve had the opportunity to travel with the Bras family all over France and the world: Singapore, Japan, Thailand, Spain, Sweden, NYC… We also host many charity dinners, notably the Chefs’ Dinner to help build homes for caregivers of sick children. It’s such a joy to be useful and to share through our profession.” One of his greatest sources of pride remains the creation in 1992 of the Bras KC association, of which he was president for many years. It brings together all the employees who work at Le Suquet or have worked there. Its purpose is to organize outings and events throughout the season, or to maintain contact with former employees of the establishment. “We write or call each other often. Some even stop by to catch up on our vacations.” Régis has passed the reins of the association to Benjamin Seignat, the pastry chef. He also handed over the reins to Julien Marcilhac, who now runs the kitchen and manages the teams alongside Sébastien. The latter knows he can always count on the advice and support of this generous man who gradually stepped back... but couldn't bring himself to leave Le Suquet completely... and now manages the hotel's maintenance teams.
