Régis, 40 years at the heart of Maison Bras

"I only remember the good times, I've forgotten the others," proclaims the man who, barely old enough to work, accompanied Mémé Bras and her son Michel, who took him under his wing and from whom he learned everything. "I must admit, I was very young and I wasn't yet at the level, but Michel's perfectionist side shaped me." Later, he assisted Sébastien Bras, whom he saw grow and flourish near the stove. "We weren't in a hierarchical relationship, but one of friendship," says Régis , who maintained a great bond with the chef. "I even cooked with Alban, son of Sébastien and Véronique, who came to continue an internship in bakery, that's 4 generations, all the same," he smiles.


Memories and sharing
“Obviously, over more than 40 years, so many good memories have accumulated. I’ve been able to travel alongside the Bras all over France and the world: Singapore, Japan, Thailand, Spain, Sweden, NYC… We also have many charity dinners, including the Chefs’ Dinner to help build homes for those accompanying sick children. It’s such a joy to be useful and to share thanks to our profession.” One of his greatest prides remains the creation in 1992 of the Bras KC association, of which he was president for a long time. It brings together all the employees who work at Le Suquet or have been there. Its aim is to organize outings and unifying events throughout the season, or to keep in touch with former employees of the Maison. “We often write or call each other. Some even stop to catch up on news on the way to their vacations.” Régis passed the keys to the association to Benjamin Seignat, the pastry chef. He also gave way to Julien Marcilhac, who now runs the kitchen and the teams alongside Sébastien . The latter knows that he can always count on the advice and kindness of this generous man who knew how to withdraw little by little... but could not bring himself to leave Le Suquet completely... and today manages the hotel's maintenance teams.
