In charge at Le Suquet since 2009, Sébastien Bras is making new tracks on Aubrac, with the same passion and the same sensibility as his father, Michel. In tune with the rhythms of the seasons, his cooking reflects and transcribes his emotions, inspired by his symbiosis with nature. His cuisine, intuitive and precise, thus becomes an experience. Along with Véronique, his wife, they welcome you with that particular sense of hospitality so dear to the inhabitants of the plateau and to the Bras family.

"Endives are often misunderstood, because of their bitter taste. This bitterness is entirely natural and an inherent part of the vegetable's charm, which I'd like people to re-discover" warns Sébastien Bras.

The potato waffle

"A trip to Peru opened my eyes to the incredible number of different varieties of potatoes which exist. To prolong the memory of my visit, I hit on the idea of creating a dessert made from this famous tuber" recalls Sébastien Bras.
